Red Beans and Rice

1 pound red beans, soaked.
2 qrts. water
1 hambone
2 pounds smoked sausage, cut in 1" pieces
3 cloves garlic, pressed
2 cups chopped yellow onion
1 cup chopped green onion
1 teaspoon Worcestershire sauce
Tabasco sauce to taste.
1 tablespoon minced fresh parsley
1 1/2 teaspoons salt
1 bay leaf crushed.
3 cups steamed rice
Rinse and drain beans.
In a large pot with lid place beans and cover with water.
Add ham bone and bring to a boil.
Reduce heat and simmer 40 minutes
. Add sausage, cover, and cook, 1 hour, stirring occasionally.
Add garlic, onions, and bay leaf.
Continue cooking, covered, 1 1/2 hours, or until soft.
Add Worcestershire sauce, tabasco, parsley and salt.
Simmer 5 minutes.
Serve over cook rice, with french bread and ice tea...Just the best!

1/2 lb cajun sausage, cut into 1-inch rounds
1/2 c of olive oil
2 c diced onions
1 c chopped red bell pepper
1 c chopped green bell pepper
1 c grated celery
6 cloves garlic, minced
1/4 tsp cayenne pepper
1/2 tsp.salt
1/2 tsp ground black pepper
2 bay leaves
1-1/2 lbs.large shrimp cleaned and deveined.
2 dozen raw oysters
1/2 lb. crabmeat
2 tbsp fresh parsley
5 c chicken broth
Cooked rice for eight people
Combine all the ingredients except the okra
in a large heavy cooking pot and bring to a boil.
Lower the heat, add the okra, and simmer for 15 minutes.
Remove from the heat , and let cool for about 2 hours
...put in ice box, and let stand for at least 4 hours.
Then put on stove to re-heat..serve over warm rice.

Court Boullion
5 quarts water
1 cup vinegar
2 Tbsp salt
2 tbsp. black pepper
2 carrots; sliced,
1 onions; peeled and sliced
2 celery ribs, chopped
Some celery leaves, chopped
3 sprigs parsley, chopped
1 tsp thyme
2 bay leaves
Put all in a pot and cover and simmer for 20 mins. Add salt and pepper.
Court Bouillon means short boil.
Add any seafood desired, or if preferred add sausage.
Serve Hot with french bread, and iced tea!
