Crab dip
1/2lb fresh Crab Meat
1 8oz cream cheese
1 tbs spicy mustard
1 tbs horseradish
Black pepper to taste
Parsley, chopped fine...to taste.
Tabasco sauce to taste,
I use a lot because I like mine spicy.
Blend all ingredients with fork.
Chill for 2 hours.
Hot clam dip
2 - 7.5 oz cans clams,
drained, reserve 1/2 can of juice.
(unless you can get fresh one!)
2 tsp. lemon juice
1 chopped onions
1 green peppers
1/4 c. fresh chopped parsley
1/4 lb. butter
1 Tbs. oregano
2 tsp. hot sauce (more or less to taste)
1/4 tsp. seasoned pepper
3/4 c. bread crumbs
Thin slices cheddar Cheese
Parmesan cheese
paprika to taste.
Simmer clams and lemon juice for 15 minutes.
Blend onions, peppers, parsley.
Mix blended onions, peppers and parsley with the clam mixture,
adding butter and
oregano
. Heat and stir until butter is melted.
Add hot pepper sauce, pepper and bread
crumbs.
Mix until blended well.
Cover with a sprinkle of parmesan,
thin layer of cheese and paprika.
Place in small covered baking dish.
Heat in a 325 degree oven,
15-20 minutes until hot and bubbly.
Jalapeno' Poppers
1 package of cream cheese
1 8oz. package of grated mozzarella cheese
tabasco sauce to taste.
Mix together well. Set aside.
Steam Jalapeno peppers for 10 minutes.
Cut open the pepper by making cut
lengthwise down one side of the pepper.
Scrape out seeds and veins with a
small spoon.
Fill the pepper with a cheese mixture.
Soak the pepper in milk for a few
seconds, then roll in flour.
Tap the loose flour off and dip in a beaten egg.
Roll the pepper in bread crumbs
and deep fry (350-degrees F) for a few seconds
(until the
breading turns golden brown).
Serve Hot, with a spicy mustard dip, or cocktail sauce!
